The people behind Queen of Cream
Cora Cotrim
A native of Brazil, food has always been a huge part of Cora’s life. The self-taught pastry chef has spent over thirteen years in the restaurant business where her love for food and the culinary arts has grown from an interest, to an obsession, to her biggest passion. She found her love for pastry as teenager, where she would spend hours whipping up treats from scratch for friends and family. Cora always wanted to be a well-rounded pastry chef and spent time honing different skills at different kitchens such as Theo’s Bakery and Cacao Atlanta. In 2013 she was given the opportunity to be the head pastry chef for Paper Plane and Victory Sandwich Bar in Decatur. Working at Paper Plane, she was able to gain the experience and confidence to pursue her pastry dreams even further.
She always felt that ice cream was the ultimate American treat, and at Queen of Cream she was given the opportunity to elevate an experience we are all familiar with. “Queen of Cream will give me the chance to play with my favorite pastry element, ice cream, while being able to dream of wonderful flavor combinations.” Cora Cotrim will oversee the conception and execution of the seasonally inspired ice cream and frozen treats of Queen of Cream. Cora is also a big fan of horticulture, the science behind pastry, and a delicious juicy steak.
Davis Sandling
Davis Sandling’s dream wasn’t always to operate an ice cream company. For the last 13 years, Davis has performed in a local rock n’ roll band and worked at a variety of business-to-business sales positions. It wasn’t until 5 years ago, when he joined the restaurant industry, did his passion for food and hospitality unfold. The restaurant industry became his learning ground as Davis developed a skillset for operational management and leadership. Throughout this time Davis broadened his skill sets by earning a degree in Organizational Communications from Kennesaw State University.
Today, he focuses on realizing his dream of launching Queen of Cream. Davis is a strong believer in the Queen of Cream business model. He believes that family, community, ethical business practices, and the finest ingredients available, makes for the best possible product we can offer. Davis looks forward to growing along with the business and continues to think of new ways to offer quality food products and experiences to his native city of Atlanta.
